Sea urchin Festival and Spaghetti cooking class in Alghero

Alghero just opened the Sea-Urchin fishing season, going untill April 12th 2016. 

While waiting for the famous  "sagra del bogamarì" (sea urchin festival), Travel Motus would like to propose you a local recipe 

Spaghetti with sea urchins of Alghero

> 1/2 Kg Spaghetti
> A glass of olive oil
> A glass of sea urchin pulp from Alghero
> A clove of garlic
> A spoon of fresh parsley
> A large pan

Sauté a clove of garlic in a pan with olive oil. Quench the fire, pour the sea urchin pulp into the pan smashing it with a fork and turning it as you get a sauce, drain the pasta and pour slowly into the pan, turn up . Add fresh chopped parsley at the end if you wish to and serve immediately with a glass of cold Vermentino wine.
